Here’s Chef Luethje!

Miraval, the destination spa in Tucson, AZ, recently announced their new executive chef, Chad Luethje, who is resonsible for all food and beverage operations. He comes to Miraval from (most recently) Red Mountain Spa, located in St. George, Utah where he was the Director of Food & Beverage. Prior to that he was the Executive Chef at Teton Mountain Lodge in Wyoming and Cedar Breaks Lodge in Utah.

One of the attributes of a destination spa is the cuisine and Miraval is known for promoting mindfulness and the philosophy that life is all about choice, and it’s evident in their cuisine as well. The dining experience at Miraval is an event in that the flavor, the texture, the creativity of each meal is important. Eating healthy is a choice and destination spas such as Miraval show guests ways to accomplish healthy and delicious meals without sacrificing flavor.

Chef Luethje has over twenty years of culinary and spa cuisine experience
and has also presented at the James Beard House.

And, as someone who travels to Miraval frequently, I am looking forward to a new culinary adventure.

Summer Sole Survivor

Summer is here and although it’s been quite hot in most of the U.S., it is officially here and time to think more about summer travel, summer fun and summer ‘must haves’ to keep your cool.  As a writer, I get a lot of information in my inbox for new products and services and there are some that I like that I thought I’d pass on, such as this one….good for your ’sole’ and useful all year, not just the summer.

FlexFlop…..if you haven’t heard of them yet, you will.   I’ve been going more frequently for pedicures and got in the habit of bringing my own flipflops, a little more sturdy than the paper type ones that you sometimes get when you leave (and good luck walking in them!).   Now we have FlexFlops……..they fold, they come in an array of cool colors and they come in a cute little bag so it’s like getting two items in one because you can also use the bag as a cosmetic bag or even as a purse for the spa….enough room for your phone (although it would be nice to leave that behind so you can relax) as well as a personal item or two. 

Another option is if you’re at an event in heels………ahh, what a relief to take them off and put these on.  So many uses and such a clever idea.  Stacy, the owner of FlexFlops, has also been on The Big Idea.   I recently spoke with her and congratulated her on her success.  Bottom line, if you have a dream, go for it.  It’s the chances we don’t take that we’ll regret later, mistakes just teach us a lesson….nothing ventured, nothing gained…..you get the idea!

More for Mom at Red Mountain Spa

But wait, there’s more to tell you about Mother’s Day weekends…

Personal Biography

No one defies stereotypes, generalizations or cliches more than Dr. Bertice Berry. Growing up poor in Wilmington, Delaware, the sixth of seven children, Bertice was told by a high school teacher that she was “not college material”. Fortunately, there was another teacher who believed that she was destined for more. Berry applied to several schools without any idea how she would pay the tuition if she were accepted. The day her application arrived at Jacksonville University in Florida, a wealthy benefactor called the Admissions Department looking for a potential student “who could swim if they had the right backing,” and might sink without it.

Bertice not only graduated magna cum laude from Jacksonville where she was awarded the President’s Cup for leadership, she subsequently earned a Ph.D. in Sociology from Kent State University at the age of 26. Dr. Berry taught sociology and statistics at Kent, and demonstrated that she knew a few things about humor, as well. She became one of the most popular teachers at the university; so popular, in fact, larger lecture halls had to be found to accommodate the ever-increasing number of students. “A colleague said to me, ‘You’re funny?, and I said, ‘No I’m not, I’m a scholar,” recounts Dr. Berry. It was then that she realized by using humor in her lectures to address such difficult subjects as racisms and sexism she was making a more profound impact.

Shortly thereafter, Berry left Kent to become an award-winning entertainer, lecturer and comedienne. From 1991 through 1994 she won the coveted national Comedian of the Year Award, and was also named Campus Lecturer of the Year and Campus Entertainer of the Year. She had created a niche as both a gifted speaker with a comic edge and a comic with a serious message. Her busy schedule included over 200 appearances a year.

Berry was the host and co-executive producer of her own nationally syndicated talk show, “The Bertice Berry Show,” and hosted “USA Live,” a four-hour live interview and entertainment show on the USA Cable Network. She’s been featured on numerous other television programs, including appearances on “The Oprah Winfrey Show,” “The Tonight Show with Jay Leno,” and more recently on ABC’s “20/20″.

Dr. Bertice Berry is also the best-selling author of an inspirational memoir, I’m On My Way, But Your Foot Is On My Head , and the hilarious bestsellers Sckraight From the Ghetto , You Might Be Ghetto If and the sequel You STILL Ghetto . Her first work of fiction, Redemption Song , published by Double Day in 2000, is also a Best-seller and has been praised by critics for its’ ability to entertain, inspire and educate. Berry followed Redemption Song , with another bestseller, The Haunting of Hip Hop and took her readers on a journey to the other side. In August 2002, she released her most passionate work ever with Jim & Louella Homemade Heart-fix Remedy , a tantalizing yet spiritual tale that has won several awards. Berry’s wit and wisdom shine through in her novel about looking for love in all the wrong places—and with all the wrong people, “When Love Calls, You Better Answer” ; released the summer of 2005. A gifted and accomplished singer, she soothes the heart and spirit with her soon to be released CD, “Breathe” , a delicate mix of meditation and song. Her next book bridges the past with the future and is more personal—tracing the history of her family— and is scheduled for release in the fall of 2007.

Dr. Berry believes that community involvement is not limited to just “writing a check” and has taken a very active role in supporting organizations that benefit those in need. She has graciously donated all of the royalties from the sales of her books to organizations that help families in transition, raise funds for scholarships and provide resource information to low-income families.

Despite all of her honors and achievements, Dr. Berry is most proud of becoming the “instant mother” to her sister’s four young children. She lives in Savannah, GA where she is active in the community. “When you walk with purpose,” Berry says, “you collide with destiny!”

Serenity and Savings at Lake Austin Spa

A few days ago I mentioned the announcement that Lake Austin Spa Resort is now the #1 Destinaton Spa according to the readers of Conde Nast (http://www.concierge.com/cntraveler/) Traveler (April 2008 issue).  They scored high for both treatments and programs as well as service.  It was also recognized for its superior cuisine and setting - and as a recent guest I do have to add that the lake setting is unique and was one of my favorite features.  With a casual and serene feel, Lake Austin Spa Resort is one to watch and one to visit!  It has moved up in the rankings over the last few years with the #2 spot in ‘07 and now #1 in ‘08.  Spa goers are the voters, and this is a great accomplishment for this intimate resort.  With only 40 rooms, it is like being at your best friend’s lake house with all the benefits of a world class spa.

Writer’s tip:  On my last visit I enjoyed an amazing service called Texas Starry Night…..I loved it and it’s one of their signature treatments - so easy to see why.   It all began with a very relaxing lavender oil massage - you’ll see that lavender is also used in the products you’ll receive in your room - and then after the massage I was wrapped for about 10 minutes (my skin felt great!) - I also received an herbal heat pack on my stomach and an herbal eye pillow for an even deeper state of relaxation.  I would have slept on the massage table if I could have….zzzzzzzzzzzzz.  Getting it prior to going to sleep is what I recommend.

Living in Balance

What a beautful spring day we’re enjoying on the east coast today…a great day to be outside to balance out the day.

Travel Deals

Happy Spring!  It’s the first day of spring and I just love looking at new flowers in my garden each day.  What a great reminder of new beginnings and renewal. 

There are several specials that I want to share with you and I thought I’d start with Canyon Ranch in Lenox (www.canyonranch.com).  As we welcome Spring, Canyon Ranch in Lenox would be one of those places to kick-start a heathier lifestyle by getting outdoors.  It’s still cool enough for a sweatshirt, however warm enough to go hiking and reconnect with nature.  After all, isn’t that what spring is all about….renewal and rejuvenation!  And so it is for us as well. 

Some options….

New to Canyon Ranch?    If you’ve never been to Canyon Ranch (Lenox) before and can share a few days respite with a friend, then you can save about 15%.   That equates to about $300 off the rate and it’s for travel in April.

Has it been this long?

I can hardly believe how much time has passed by since my last entry.  It just seems like it’s been one continuous day.  I returned from Miraval (www.miravalresort.com) feeling energized and ready for everything and then some twists and turns we call life decided to give me another jolt.  You know what I mean……house challenges, feeling overwhelmed and the list can go on.  That’s why I feel so strong about taking a break from ‘life as we know it’ and sometimes it’s just about taking a long drive to clear our head or going to your favorite cafe for a long cup of coffee or glass of wine or better yet an hour at the gym - that seems to do me the most good. 

I’m ready for another 3 or 4 nights away just to regroup, how about you?

Miraval and Returning Home

I was so busy on Day 3 (www.miravalresort.com) that I didn’t write to tell you more about my amazing journey.  In fact, there was more I wanted to do so I decided to give myself one more night and I stayed totally engaged on Friday.  As I mentioned, it takes about 36 hours to get to a point of relaxation and some of you may get there sooner, however many of us take a little longer.

Friday was a day that I’ll remember for quite some time and my goal, as always when I’m at Miraval, is to apply what I learned when I return home.  What’s even more important is to focus on staying in the moment and when you go to Miraval and do one of the services that engages you to focus on breath and to really feel, well I can’t tell you how important that is because it can really stay with you.  For instance, the Samadi Healing Ceremony that I mentioned in my last post is a good example (http://www.miravalresort.com/S……vityID=486).   First of all, it’s in one of the new outdoor treatment rooms and the rooms are beautiful.  We kept the door open for awhile to connect with nature and get some air.  It was a little warmer than it had been, so it was so relaxing in this outdoor setting and then to have a breeze and the sounds of nature - well, just perfect.   The Samadi Healing encompasses acupuncture, Native Shamanic drumming, reiki and reflexology.  The service is reviewed before you get started so the idea with most sessions like this is to set your intention and think about what you want to let go of or bring into your life.  Again, I don’t want to get overly personal, so once I made the decision I carried that intention with me during the ceremony.  The acupuncture was done at five points on each ear and the third eye (if you’re familiar with the chakras, you’ll know what this refers to), this is said to open your heart.  I was so relaxed after this was done, the drumming and the chanting brought me a sense of peace and deep relaxation.  It was a feeling of letting go.  Dr. Tim performs this service and I was interested because of the session I had with him in May 2006 - Holographic Memory Resolution.  To this day, that service has stayed with me.  It has to do with assisting one to change their reaction to a memory.  It doesn’t change the memory, just the reaction.  If you’d like to know more about it and what I mean by it staying with me, please call or e-mail me (www.spa-vacation-experts.com).  Back to Samadi Healing…for some people they may feel a loved one present or perhaps have a vision of someone or strong thought or memory.  It’s transformational, and sometimes you don’t realize the benefits of a service right away, it could take a couple of days as it did for me.  I was in such a relaxed state when it was over and as always I wanted it to go on just a little longer hoping and wanting to discover a little more and get to another level of total relaxation.  I have a better sense of self, and I do feel different and change did happen.   I don’t want to share everything because it is so different for everyone, we each have our own experience and it may be different for you. 

After this session I chose to ‘just be’ for about 45 minutes because again, I wanted to do so many things on my last day.  So after some journaling (reflecting on the Samadi Healing) I went to a cooking demo.  If you’re a ‘foodie’ you’ll want to go to as many as you can.  Friday’s demo was on butternut squash soup (a favorite) and it was fun watching chef demonstrating Miraval’s version while enjoying a healthy lunch. 

Another session that I’d like to encourage you to do is the Changing your Metabolism lecture.  Even if you know about metabolism, it really is a good refresher - so much information and vital to healthy living.  Another highlight of my day was getting to meet Maggie Garbarini, a reknowned psychic and amazing woman.  In her lecture, she discussed the meaning of psychic power and intuition, numerology, and about her life as a psychic and what her readings are and how they can help people.  Part of her lecture was to give us an overview of our lives using numerology.  Time was limited, however it was time spent wisely.  Many guests of Miraval return just to see Maggie.

There was still one more activity left for me before returning home on Saturday.   I didn’t want to leave without doing the Metabolic testing and body composition.  It’s such an important test as it measures your metabolic resting rate, your lean body mass (pretty good), percentage of body fat (working on it) and cellular water levels (dehydrated, working on increasing water intake).  All of this information is vital in achieving your personal weight and nutrition goals.  I also found out that I do have a slow metabolism.  I cook healthy meals, I thought I was eating enough (need to increase calories) and yet I returned with homework and I’m so glad I did this before I ventured home.   At first, I didn’t want to know, the old ‘bury your head in the sand’ syndrome.  As we all know, knowledge is power and now I have an important tool to continue on my path to total wellness.  Since returning home, I’ve increased my water intake, increased my fruits and vegetables and am working at adding more exercise and rest.  So, until next time, treat yourself well.  Eat to nourish, exercise to feel good and rest - you deserve to be good to yourself.  Miraval can help.  (www.miravalresort.com
